Girls and I Bake - again lol

Hi peeps!

Last week we did a poll on what it is that you guys would like to see more of; turns out that baking won hands down!! Thanks to all who voted and hope you will take part in our Food Wars vote too! I'm curious to know which country is gonna kick culinary butt!!

When we get a little on the bored side at home; the girls and I take to the kitchen for some quality bonding time doing what we do best: baking! And seeing as baking won the poll; here's what we did: (ps sorry about the awful quality pics; will be sorting that issue out soon!)

We came across this quick and easy cupcake recipe and decided to give it a whirl.... Needless to say; we made the stuffin' cupcakes; only to find that our "icing sugar" was in fact CORNFLOUR!!!! Aaaaargh!!! And it was a bit too late at night to go buy any or even borrow from our neighbours.

Akira saved the day and the cupcakes with her quick thinking: she cut the cupcakes in half and dolloped them with mixed fruit jam! We then whipped some cream and had jam and cream cupcakes for dessert that night!

Here's the recipe we used and the pictures of us working it in the kitchen.
 
Easy Vanilla Cupcake Mix:
Ingredients:

1 ½ cups flour
¾ cup sugar
2 tsp baking powder
½ tsp salt
½ cup milk
½ cup oil
2 eggs
1 tsp vanilla essence



Method:

Sift dry ingredients together.
Add wet ingredients to the dry ingredients and beat well until smooth and creamy.
Place paper cups into muffin tin and fill each cup 3/4 full.
Bake for 15 minutes at 180° C.

Icing:
Cream together 125g margarine and 125g icing sugar.
Add two tablespoons of milk and mix well.
Add cocoa or food colouring.
- like I said; we cut them in half and blobbed on jam and whipped cream for an Akira variation! Came out preettyy awesome; I must say.
